Baking is not my forte – let’s just get that out in the open. The good news is, that means these muffins are really REALLY easy.
This ridiculously simple recipe is a bit of a mash-up of a couple I found online. The prep took around five minutes (I’m not even joking) and cooking time about 17 minutes. And then it took me about 45 seconds to eat two of them. They are that good!
Gluten-Free Choc-Banana Muffins (makes 12)
Ingredients
2 cups almond meal
1/4 cup desiccated coconut
3 tablespoons cacao nibs
3/4 teaspoon baking soda
1/2 teaspoon baking powder1/4 teaspoon sea salt
2 ripe bananas
2 eggs
1/2 cup Manuka honey
2 dessert spoons coconut oil, melted
1 teaspoon vanilla extract
Method
1. Pre-heat oven to 180 degrees Celcius
2. Mix dry ingredients in a bowl
3. Mix wet ingredients in a bowl
4. Add wet mixture to dry mixture
5. Scoop batter into paper lined muffin pan
6. Bake for approx 17-20 minutes (mine were done at 17mins)
I reckon top five muffins I’ve ever tasted.
