I’m not sure if I’ve mentioned it before, but I have a bit of a sweet tooth. Oh wait, yep. I have. Here, here and again over here. Turns out I’ve mentioned it pretty regularly over the past 18 months or so. Ahem.
Anyway.
The other night for dessert I made a delightful little concoction that I want to share with you. With nothing in it except fruit, coconut water and ice, it’s the perfect after-dinner treat or mid-afternoon snack on a hot summer’s day. Plus, it’s layered, so it looks fancy enough to fool any guests into thinking you’re some kind of magic kitchen wizard. I just use one of those George Foreman Mix n Go stick blenders (think it cost me about $39 from Target) and it does the job perfectly.
Banana, Mango and Berry Layered Smoothie
Ingredients
One banana – sliced and frozen
Half a mango – frozen
Handful mixed berries – frozen
H2Coco coconut water
Ice
Coconut (for garnishing)
Method
1. Add banana, mango, a handful of ice and and really good dash of coconut water to the blender and blend until desired consistency is reached, adding more coconut water if necessary.
2. Pour into a glass
3. Add berries, handful of ice, dash of coconut water to blender and repeat the process
4. Add to top of glass
5. Sprinkle with coconut or other preferred garnish
6. ENJOY
Assuming you’ve got some pre-prepared frozen fruit in your freezer, this whole process will take you under five minutes. Not joking. I’m pretty sure all of us can spare that much time in return for a refreshing glass of delicious.
