Struggling to find summer treats that don’t make you a) super bloated b) ride a sugar rollercoaster or c) drunk ? Let me help you out with three healthy treats that are all delicious and – of course – nutritious.
FRUIT AND VEG SMOOTHIE
Sneak some extra veggies into your day!
Ingredients
½ cup of mixed berries (frozen)
1 banana (frozen)
1 handful baby spinach leaves
5cm piece of zucchini (chopped)
6-8cm piece of celery
1 cup coconut water
4 ice cubes
Method
Add all ingredients to blender and blend until smooth. Add more liquid if necessary.
Pro tip: Chop enough non-liquid ingredients for a few smoothies and store in zip-lock bags in the freezer. When you want to make a smoothie, simply add the entire contents of bag to blender, pour in liquid and you’re good to go!
MANGO BERRY YOGHURT POPS
More refreshing than a store bought treat and much better for you too!
Ingredients
3 ripe mangos, chopped
1 cup Greek yoghurt
1/3 cup berries
Method
Place mangos in food processor and process until smooth.
Transfer to a large bowl, add yoghurt and fold until combined.
Place berries in a small bowl and mash with fork.
Fold berries gently through yoghurt mixture.
Spoon mixture into moulds and place in freezer until firm (approximately 8 hours).
Pro tip: If Greek yoghurt is too tart for you, try adding mixing through a teaspoon of honey.
FRUIT SKEWERS WITH MINT YOGHURT DIP
The perfect treat for summer barbecues and kids’ parties.
Ingredients
1 cup grapes
1 cup pineapple, peeled and diced
1 punnet strawberries, washed
2 cup watermelon, peeled and diced
1 cup rockmelon, peeled and diced
Yoghurt dip
1 cup plain Greek yoghurt
3 tablespoons finely shredded mint leaves
3-4 drops vanilla extract
Method
Thread fruit onto bamboo skewers in whatever order you choose.
Combine yoghurt, mint leaves and vanilla extract in a small bowl for dipping.
Pro tip: You can use whatever fruit you have on hand but keep in mind that really soft fruits (like mango) won’t work quite as well.
