Like many people (or so I tell myself), my Sunday night dinner often consists of scrambled eggs on toast or something equally basic. Occasionally though, I’ll decide to get a little jazzy and try something new. Last Sunday was one of those days.

But given everything we know about refined sugar and the effects it can have on the body (immune system suppression, tooth decay, unstable moods, ageing skin, weight gain to name just a few) I try not to eat too much of the stuff. Emphasis on the too much – no point pretending I’m perfect.

A few months ago (when LGF was just a twinkle in my eye) I was toying with the idea of starting a health and fitness blog and chatting to a good friend of mine, Clementine, about it. Clemmy mentioned a fabulous blog called The Shrinking Hubby, full of clean, healthy and (most importantly) simple recipe ideas. I’m always on the lookout for new meals to add to my limited repertoire, so as soon as I got off the phone I was onto the internets to check it out.

It was Cupcake Day here in Australia on Monday – one of my favourite days of the year and a brilliant fundraising initiative by the RSPCA (Royal Society for the Prevention of Cruelty to Animals). All over the country animal lovers madly bake, decorate and sell cupcakes to raise much-needed funds to help the RSPCA continue their very important work fighting animal cruelty. I’m a huge advocate of rescuing/adopting rather than purchasing pets wherever possible, so this fundraiser is pretty close to my heart.

I used to be – in high school and through my early 20’s I was all about light cheese, light coconut milk, fat-free yoghurt – and God help you if you put full cream milk in my coffee. Ironically, this was probably my most unhealthy and heaviest period (weight-wise) of my life.

Well I don’t know about you guys, but I’m ready for this rain to stop. I quite enjoyed it over the weekend – it was a good excuse to stay indoors and relax – but now I’m it’s time for the sun to return! Salmon is one of my favourite things to eat, which is kinda nice given it’s also a great source of protein, vitamin D and Omega-3 fatty acids. Unfortunately my enthusiasm for eating it doesn’t quite match my talent for cooking it, and my repertoire of salmon-based dishes consists of exactly one. Luckily I REALLY like this dish… and now you can fall in love with it too.

Cooking has become a little bit of a process for me these days. Every meal must now be photographed at different stages during preparation, then plated up and vetted for taste before I can consider whether it makes an appearance on the blog. Given that I am neither a talented photographer nor cook, you can imagine the number of rather average meals that I’ve been serving up lukewarm to my poor boyfriend of late.

Although it wasn’t always this way, these days I like to think I eat relatively well. The more I’ve read recently though, the more I realise that while my diet doesn’t necessary involve a lot of what you might consider ‘unhealthy’ foods, I’m probably not really getting the nutrients I should be. I also have a bit of a (read: major) sugar addiction. So for these reasons I’ve decided to give my diet a bit of a shake up – nothing crazy mind you, because I see no point in setting myself up for failure. The aim is simple – less processed foods, less added sugars and more nutrient rich vegies, seeds, fruits etc.
