From a moral perspective, I’d love to go vegetarian… from a practical perspective, I know that’s unlikely to happen in my foreseeable future. Instead, I’ve resolved to be more mindful of where my meat comes from, and more respectful of the fact that an animal has to die as part of the process.

I hope I didn’t lose anyone there.

Of course the issue is that by the time we hit The Danger Zone it’s not just hunger that we’re contending with. It’s also boredom and dipping sugar levels. It’s an energy slump. It’s the fact that we just like eating darn it!

Simple Beef and Veggie Casserole

If you’re on the east coast of NSW, you’re possibly feeling a little bit confused about the weather of late. Seriously, we’re going from wind to sun to rain to sun and back to wind again… it’s so changeable at the moment that you’d be forgiven for thinking we were living in Melbourne! Anyway, a couple of weeks ago (we must have been in the midst of a rainy/windy day) I decided to combat the chill by cooking up a big pot of hearty stew. Full of veggies and protein-rich beef, it’s also the perfect ‘some now, some later’ meal. In fact, I think I ended up getting about 8-10 serves from it – the last one I gobbled down on Wednesday night.

It was Cupcake Day here in Australia on Monday – one of my favourite days of the year and a brilliant fundraising initiative by the RSPCA (Royal Society for the Prevention of Cruelty to Animals). All over the country animal lovers madly bake, decorate and sell cupcakes to raise much-needed funds to help the RSPCA continue their very important work fighting animal cruelty. I’m a huge advocate of rescuing/adopting rather than purchasing pets wherever possible, so this fundraiser is pretty close to my heart.
