Do you want to hear something scary? According to the World Health Organisation, the number of people in the world living with diabetes has nearly quadrupled since 1980. Diabetes Australia quotes that in Australia, 280 people are diagnosed with diabetes every day. That’s one every five minutes. And that figure doesn’t even take into account the number of people currently living with pre-diabetes. Diabetes complications can lead to serious health complications, including heart attacks, stroke, blindness, kidney failure and limb amputation. And the scariest part of all – but the part that should also give us the most hope – is that the most prevalent form of diabetes (type II) is entirely preventable….

Crispy Skinned Salmon on Salad of Spinach, Blueberries and Pistachios
A couple of weeks back I was asked to put together a recipe for the team over at Shop Naturally. They have a beautiful website and an ethos that we can all aspire to, so of course I was going to say yes. Now, anyone that knows me knows that if I put together a recipe for you there are a couple of things you can be sure of. For starters, it’s going to be pretty simple. And secondly, it’s going to be pretty simple….
Peanut Butter and Oat Protein Balls
Oh peanut butter. My love for you is strong. So strong in fact, that we had to stop seeing each for a little while. It was difficult. I cried myself to sleep every night, but if anything I think it just made me appreciate you – and the good times we had – even more.

I hope I didn’t lose anyone there.

Zesty Apricot & Cacao Chip Bliss Balls
In case you missed it over on Instagram last night, this week I un-cooked a couple of batches of bliss balls for a charity bake sale at work. These delicious bite-sized morsels are excellent little energy snacks to keep in the fridge or freezer for when you need a quick hit and don’t want to reach for something unhealthy.

Fruit, Nut & Choc Energy Snack
3pm – AKA The Danger Zone. The time of day most likely to have us reaching for chocolate or biscuits or (oh dear) biscuits coated in chocolate. Of course the issue is that by the time we hit The Danger Zone it’s not just hunger that we’re contending with. It’s also boredom and dipping sugar levels. It’s an energy slump. It’s the fact that we just like eating darn it!…
