Vitasoy Coconut Milk with Zoe Bingley-Pullin

My fave smoothie ingredients

My fave smoothie ingredients

I’ve been a big fan of coconut products for the last 18 months or so, which actually makes me pretty late to the party compared to a lot of people. But what I lack in experience I make up for in enthusiasm, with some coconut-related product making an appearance in almost every meal. From my quinoa and sweet potato salad to the choc-coconut paleo cupcakes through to my fave chicken curry, there’s really not much that this magical fruit hasn’t done for me….

Five Fit Minutes with… Sally O’Neil

October 2, 2014 By LazyGirlFitness Leave a Comment

I’d been following The Fit Foodie for months, (drooling over her recipes and envying her creativity) when we finally met in real life at the opening of the Performa Nutrition Cafe in Waterloo a few months back. We bonded pretty much instantly over our shared love of fitness, health, dogs, blogging and talking far too much, and the rest is kind of history.

Five Fit Minutes with… Lauren Priest

Lozzy1
I first met Lozzy a few years ago when she was just a wee little tyke, running the City2Surf for the first time. She was full of energy and totally crazy back then, and not much has changed since. Oh, except she’s now a qualified personal trainer and has just completed her Masters in Dietetics and taken on a full time role as a dietician. And she’s still only 23….

My Five Fave Foodie Blogs

June 20, 2014 By LazyGirlFitness 3 Comments

I like food. I like to eat it. I like to think about eating it. I like to talk about eating it. I like to read about it. I like to look at photos of it. I like to take photos of it.

I have an addiction to food, and as far as addictions go I guess it’s not a bad one – though the drool on my keyboard does make it difficult to type at times…

You know who I blame? Ladies, I’m looking at you:

Simple & Healthy Vegetarian Fried Rice

April 2, 2014 By LazyGirlFitness 1 Comment

From a moral perspective, I’d love to go vegetarian… from a practical perspective, I know that’s unlikely to happen in my foreseeable future. Instead, I’ve resolved to be more mindful of where my meat comes from, and more respectful of the fact that an animal has to die as part of the process.

I hope I didn’t lose anyone there.

Zesty Apricot & Cacao Chip Bliss Balls

March 12, 2014 By LazyGirlFitness 3 Comments

In case you missed it over on Instagram last night, this week I un-cooked a couple of batches of bliss balls for a charity bake sale at work. These delicious bite-sized morsels are excellent little energy snacks to keep in the fridge or freezer for when you need a quick hit and don’t want to reach for something unhealthy.

Fruit, Nut & Choc Energy Snack

March 7, 2014 By LazyGirlFitness 1 Comment

3pm – AKA The Danger Zone. The time of day most likely to have us reaching for chocolate or biscuits or (oh dear) biscuits coated in chocolate. Of course the issue is that by the time we hit The Danger Zone it’s not just hunger that we’re contending with. It’s also boredom and dipping sugar levels. It’s an energy slump. It’s the fact that we just like eating darn it!…

Asian-Inspired Beef and Vegetable Stir-Fry

October 24, 2013 By LazyGirlFitness 3 Comments

Like many people (or so I tell myself), my Sunday night dinner often consists of scrambled eggs on toast or something equally basic. Occasionally though, I’ll decide to get a little jazzy and try something new. Last Sunday was one of those days.

Cacao, Date & Cranberry Balls

September 24, 2013 By LazyGirlFitness 5 Comments

It’s no secret that I have a bit of a sweet tooth. A whole mouth full of them actually. But given everything we know about refined sugar and the effects it can have on the body (immune system suppression, tooth decay, unstable moods, ageing skin, weight gain to name just a few) I try not to eat too much of the stuff. Emphasis on the too much – no point pretending I’m perfect.
