LG Motivation – The Shrinking Hubby

Sometimes a story comes along that is too inspiring not to share. For me, this is one of those stories.

A few months ago (when LGF was just a twinkle in my eye) I was toying with the idea of starting a health and fitness blog and chatting to a good friend of mine, Clementine, about it. Clemmy mentioned a fabulous blog called The Shrinking Hubby, full of clean, healthy and (most importantly) simple recipe ideas. I’m always on the lookout for new meals to add to my limited repertoire, so as soon as I got off the phone I was onto the internets to check it out.

Hearty Chicken and Vegetable Soup

Well I don’t know about you guys, but I’m ready for this rain to stop. I quite enjoyed it over the weekend – it was a good excuse to stay indoors and relax – but now I’m it’s time for the sun to return! Just last week I was marking the winter solstice and celebrating the downhill slide to summer, but it seems someone is out there making a mockery of me. Or maybe just reminding me that I should leave weather forecasting to the experts.

Lime and Ginger Salmon with Asian Greens

Salmon is one of my favourite things to eat, which is kinda nice given it’s also a great source of protein, vitamin D and Omega-3 fatty acids. Unfortunately my enthusiasm for eating it doesn’t quite match my talent for cooking it, and my repertoire of salmon-based dishes consists of exactly one. Luckily I REALLY like this dish… and now you can fall in love with it too.

Cooking has become a little bit of a process for me these days. Every meal must now be photographed at different stages during preparation, then plated up and vetted for taste before I can consider whether it makes an appearance on the blog.
